SPAGHETTI ALLA CARBONARA
ingredients for 4 people
3 egg yolks
1 entire egg
14 ounces of spaghetti
smoked bacon 5.30 ounces
1 small white onion
1 handful of grated parmesan cheese
black pepper
salt
olive oil
grated nutmeg a pinch
preparation
mix the egg and egg yolks in a bowl with a pinch of salt,
some ground black pepper, a pinch of nutmeg and a handful of grated parmesan cheese.
In a pan heat up a couple spoons of oil and add the onion finely
chopped and the bacon cut up in strips or diced as you prefer.
Let it toss for a couple of minutes then turn off the heat.
Cook the spaghetti in plentiful salted water, drain them, turn the heat on under the pan and toss them with the onion and bacon for a minute or two. When ready turn the heat off and add the egg mixture
in the pan, stir well and serve hot with some extra black pepper on it.
